  1. Turn on the Instant Pot on sautee. Add frozen bone broth, 2 teaspoons of BAJO (or other all-purpose seasoning) and thyme spigs.
  2. In a heated saucepan, add EVOO. Season the skin side of the thighs of the BAJO seasoning. Pan sear the chicken. While the chicken is searing, drain tomatoes and blend. Once the chicken is seared on both sides, remove the chicken and add the tomatoes. Stir to get the yummy bits off the bottom of the pan.
  3. Add the chicken to the IP. Top with all the veggies and then pour the tomatoes on top. Turn off sautee mode and cook on manual for 15 minutes. Allow to natural release the steam.
  4. Serve on top of mashed potatoes, spaghetti squash, rice or your choice. Top with chopped basil and Parmesan.
